Ingredients

  • 1 Tbsp olive oil
  • ½ medium onion, finely diced
  • 4 cups broccoli florets
  • 1 Tbsp minced garlic (about 3 cloves)
  • ½ cup cashews, soaked in water for 1 hour
  • 1 Tbsp light miso paste
  • 2 cups water + more to adjust consistency (if necessary)
  • 2 cups spinach leaves
  • ¼ cup nutritional yeast
  • 2 tsp apple cider vinegar
  • Salt and black pepper to taste

Directions

  1. In pot covered with a lid, cook onions, garlic, and broccoli with the olive oil and 2 Tbsp of the water until broccoli is bright green (about 5 minutes).
  2. Transfer to a blender add the remaining ingredients. Blend until smooth.
